Description

A delightful dish combining succulent chicken pieces with sweet-tart pomegranate juice and zesty sumac, perfect for family gatherings.

Ingredients

Scale
  • 4 chicken pieces (thighs or drumsticks)
  • 1 cup pomegranate juice (freshly squeezed or store-bought)
  • 2 tablespoons sumac
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (thyme or rosemary), to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat chicken pieces dry with paper towels.
  3. In a large bowl, combine pomegranate juice, olive oil, minced garlic, sumac, salt, pepper, and herbs to create the marinade.
  4. Add chicken pieces to the bowl, ensuring they are well-coated. Let them marinate for at least 30 minutes.
  5. Place the chicken in a single layer on a parchment-lined baking sheet and pour any remaining marinade over the chicken.
  6. Roast for 40-50 minutes or until cooked through and golden brown.
  7. Let rest for 5-10 minutes before serving.

Notes

Adjust roasting time based on the size of chicken pieces; larger pieces may require more time. For extra flavor, add whole garlic cloves and pomegranate seeds in the last 10 minutes of roasting.
