A festive and creative potato salad shaped like a Christmas tree, perfect for holiday gatherings.
Ingredients

- 4 medium potatoes (Russets or Yukon Golds)
- 1/2 cup mayonnaise (or Greek yogurt)
- 2 tablespoons mustard (Dijon or yellow)
- 1 cup finely chopped celery
- 1 cup chopped bell peppers (red, green, or yellow)
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1 teaspoon paprika
- Optional: chopped hard-boiled eggs or diced pickles
- For decoration: sliced olives and a sprig of parsley
Instructions
- Prep the potatoes by washing, peeling, and cutting them into cubes. Boil in salted water until fork-tender, then drain and let cool.
- In a large bowl, combine mayonnaise, mustard, salt, pepper, and paprika to make the dressing. Adjust seasoning to taste.
- Once cooled, fold the potatoes into the dressing gently, then add the chopped celery, bell peppers, and herbs.
- Spoon the salad onto a serving platter and mold into a triangular shape to resemble a Christmas tree.
- Decorate with sliced olives for ornaments and a sprig of parsley for the top of the tree.
- Cover and refrigerate for at least an hour before serving cold.
