Description

A heartwarming beef stew featuring rich flavors from red wine and aromatic herbs de Provence, perfect for sharing around the dinner table.

Ingredients

Scale
  • 2 lbs beef chuck or stew meat, cut into 1.5-inch cubes
  • 1 cup dry red wine
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 cups beef broth
  • 2 tablespoons herbs de Provence
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the meat by cutting the beef into uniform cubes and patting dry.
  2. Sear the meat in a large pot with heated olive oil until golden brown on all sides.
  3. Remove the beef and sauté chopped onions until translucent, then add minced garlic and cook for an additional minute.
  4. Deglaze the pot with red wine, scraping up the brown bits, and simmer for 5 minutes.
  5. Add the beef back into the pot along with carrots, potatoes, beef broth, herbs de Provence, salt, and pepper. Bring to a gentle boil.
  6. Reduce heat, cover, and let simmer for 2-3 hours until the beef is fork-tender.
  7. Taste and adjust seasoning if necessary, then let it rest for 10 minutes before serving.

Notes

This stew is perfect for customization—swap in seasonal veggies or use chicken for a lighter version.
