Description

Ingredients

  • 1 cup fresh pumpkin puree (homemade if possible)
  • 1 cup heavy cream
  • 1/2 cup granulated sugar (or brown sugar)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin (or agar-agar as a substitute)
  • 2 tablespoons cold water

Instructions

  1. In a small bowl, add gelatin and mix it with cold water. Let it bloom for 5 to 10 minutes.
  2. In a large bowl, combine pumpkin puree, sugar, cinnamon, nutmeg, and ginger. Stir well, then add vanilla extract.
  3. Gently heat the bloomed gelatin until dissolved, then let it cool slightly before adding to the pumpkin mixture. Stir to combine.
  4. In another bowl, whip the heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the pumpkin mixture to maintain an airy texture.
  6. Transfer to serving dishes and refrigerate for at least 2 to 4 hours until set.
  7. Serve with a dollop of whipped cream, crushed graham crackers, or nuts if desired.

Notes

For a dairy-free option, use coconut cream instead of heavy cream. Maple syrup can replace granulated sugar for added flavor.
