- 1 tablespoon gelatin (or agar-agar as a substitute)
- 2 tablespoons cold water
Instructions
- In a small bowl, add gelatin and mix it with cold water. Let it bloom for 5 to 10 minutes.
- In a large bowl, combine pumpkin puree, sugar, cinnamon, nutmeg, and ginger. Stir well, then add vanilla extract.
- Gently heat the bloomed gelatin until dissolved, then let it cool slightly before adding to the pumpkin mixture. Stir to combine.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the pumpkin mixture to maintain an airy texture.
- Transfer to serving dishes and refrigerate for at least 2 to 4 hours until set.
- Serve with a dollop of whipped cream, crushed graham crackers, or nuts if desired.
Notes
For a dairy-free option, use coconut cream instead of heavy cream. Maple syrup can replace granulated sugar for added flavor.
