Ingredients

- 2 cups rolled oats
- 1/2 cup unsalted butter, melted
- 1 tablespoon brown sugar
- 1/4 teaspoon salt
- 2 cups pumpkin puree
- 3 large eggs
- 1/2 cup maple syrup
- 1/2 cup whole milk
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine rolled oats with melted butter, brown sugar, and salt. Press into the bottom and up the sides of a tart pan.
- In another bowl, whisk together pumpkin puree, eggs, maple syrup, milk, and spices until well combined.
- Pour the pumpkin filling into the crust, spreading evenly.
- Bake for 30-35 minutes until the filling is set but slightly jiggly in the center. Allow to cool completely before serving.
- Slice and serve warm, optionally topping with whipped cream or toasted pecans.
Notes
For a dairy-free option, substitute butter with coconut oil or vegan butter. You can also use butternut squash puree as a substitute for pumpkin puree.
