Ingredients

  • 2 cups rolled oats
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 2 cups pumpkin puree
  • 3 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup whole milk
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats with melted butter, brown sugar, and salt. Press into the bottom and up the sides of a tart pan.
  3. In another bowl, whisk together pumpkin puree, eggs, maple syrup, milk, and spices until well combined.
  4. Pour the pumpkin filling into the crust, spreading evenly.
  5. Bake for 30-35 minutes until the filling is set but slightly jiggly in the center. Allow to cool completely before serving.
  6. Slice and serve warm, optionally topping with whipped cream or toasted pecans.

Notes

For a dairy-free option, substitute butter with coconut oil or vegan butter. You can also use butternut squash puree as a substitute for pumpkin puree.
