Ingredients

  • 1 package of crescent rolls
  • 6 large eggs
  • 1 cup of whole or 2% milk
  • 1 pound of breakfast sausage
  • 1 cup of bell peppers (diced)
  • 1 cup of onions (diced)
  • 1 cup of shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned. Add diced onions and bell peppers halfway through cooking.
  3. Roll out the crescent rolls in a greased 9×13 baking dish, pinching the seams together.
  4. In a bowl, whisk together eggs and milk, then fold in the cooked sausage and sautéed veggies. Pour over the crescent roll base.
  5. Sprinkle shredded cheese on top.
  6. Bake for 25-30 minutes or until the casserole is set and golden brown.
  7. Let it rest for a few minutes before slicing to serve.
