Description
A fluffy and satisfying vegan omelette made with firm tofu, sautéed mushrooms, and fresh herbs, perfect for breakfast or brunch.

- 1 block firm tofu
- 1/4 cup nutritional yeast
- 1 teaspoon garam masala
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms (shiitake or cremini), chopped
- 1/4 cup fresh herbs (parsley or chives), chopped
- 1/2 teaspoon turmeric
- 1/4 cup plant-based milk
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Press tofu for 15 minutes to remove excess moisture.
- In a skillet over medium heat, heat olive oil and sauté onions and garlic until fragrant, about 3-4 minutes.
- Crumble pressed tofu into a bowl; mix in nutritional yeast, turmeric, garam masala, salt, pepper, and plant-based milk until fluffy.
- Add mushrooms and fresh herbs, mixing to combine.
- Pour tofu mixture into the skillet, spreading evenly; cook undisturbed for 5-7 minutes until edges set.
- Gently flip omelette and cook for another 3-4 minutes until golden and crispy.
- Slide onto a plate, garnish with herbs, and serve immediately.
Notes
Serve with avocado, crispy hash browns, or fresh salad. You can substitute tempeh for tofu or nutritional yeast for vegan cheese as needed.
