Ingredients

  • 1 block firm tofu
  • 1/4 cup nutritional yeast
  • 1 teaspoon garam masala
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms (shiitake or cremini), chopped
  • 1/4 cup fresh herbs (parsley or chives), chopped
  • 1/2 teaspoon turmeric
  • 1/4 cup plant-based milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Press tofu for 15 minutes to remove excess moisture.
  2. In a skillet over medium heat, heat olive oil and sauté onions and garlic until fragrant, about 3-4 minutes.
  3. Crumble pressed tofu into a bowl; mix in nutritional yeast, turmeric, garam masala, salt, pepper, and plant-based milk until fluffy.
  4. Add mushrooms and fresh herbs, mixing to combine.
  5. Pour tofu mixture into the skillet, spreading evenly; cook undisturbed for 5-7 minutes until edges set.
  6. Gently flip omelette and cook for another 3-4 minutes until golden and crispy.
  7. Slide onto a plate, garnish with herbs, and serve immediately.

Notes

Serve with avocado, crispy hash browns, or fresh salad. You can substitute tempeh for tofu or nutritional yeast for vegan cheese as needed.
