- 2 cups almond flour
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/2 cup raspberry jam
- 1 teaspoon vanilla extract
- 1 egg white
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour and powdered sugar, then add softened butter, egg white, vanilla extract, and salt, mixing until a dough forms.
- Take a tablespoon of dough, flatten it, add a spoonful of raspberry jam in the center, fold, and roll into a ball.
- Place dough balls on a baking sheet and bake for 12-15 minutes until edges are lightly golden.
- Allow to cool slightly, then roll cookies in powdered sugar before serving.
