Delightful heart-shaped cookies filled with tart raspberry jam, featuring a nutty almond flavor.

- 3 cups all-purpose flour
- 1 cup ground almonds
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Cream softened butter and granulated sugar until light and fluffy, about 3 minutes.
- Add vanilla extract and ground almonds, mixing until combined.
- Gradually incorporate all-purpose flour until the dough comes together; add milk if too crumbly.
- Wrap the dough in plastic wrap and chill in the fridge for about 60 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll out the dough to 1/4-inch thick and cut cookies with heart-shaped or round cutters, making cutouts in half of them.
- Place cookies on the prepared sheet and bake for 10-12 minutes, or until lightly golden.
- Once cooled, spread raspberry jam on solid cookies, top with cutout cookies and dust with powdered sugar before serving.
Notes
Store cookies in an airtight container at room temperature for up to one week. They also freeze well for up to three months.
