  • 2 cups all-purpose flour (or whole wheat flour)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup melted butter
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts
  • 1 cup powdered sugar
  • 1/4 cup softened butter (for frosting)
  • 2 tbsp milk or cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl.
  3. In another bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, and vanilla until creamy.
  4. Combine the mashed bananas with the wet mixture.
  5. In a separate bowl, mix flour, baking soda, and salt. Gradually fold this into the banana mixture.
  6. Fold in the chopped walnuts.
  7. Pour batter into the loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. While cooling, prepare the frosting by mixing powdered sugar, softened butter, milk, and vanilla until smooth.
  10. Spread the frosting on the cooled bread and serve.

Notes

For a dairy-free version, substitute butter with coconut oil. To make it nut-free, omit walnuts or use chocolate chips.
