- 4 ripe bananas
- 2 cups all-purpose flour (or whole wheat flour)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs
- 1/2 cup melted butter
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 cup chopped walnuts
- 1 cup powdered sugar
- 1/4 cup softened butter (for frosting)
- 2 tbsp milk or cream (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
- Mash the ripe bananas in a large mixing bowl.
- In another bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, and vanilla until creamy.
- Combine the mashed bananas with the wet mixture.
- In a separate bowl, mix flour, baking soda, and salt. Gradually fold this into the banana mixture.
- Fold in the chopped walnuts.
- Pour batter into the loaf pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- While cooling, prepare the frosting by mixing powdered sugar, softened butter, milk, and vanilla until smooth.
- Spread the frosting on the cooled bread and serve.
Notes
For a dairy-free version, substitute butter with coconut oil. To make it nut-free, omit walnuts or use chocolate chips.
