Ingredients

  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 tablespoon red food coloring (optional)
  • 8 oz cream cheese, softened
  • 1 ¼ cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy.
  3. Add in one egg at a time, followed by the buttermilk and vanilla extract. Mix until well combined.
  4. In another bowl, whisk together the flour, cocoa powder, and a pinch of salt. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  5. Fold in the red food coloring until you achieve your desired color.
  6. In a separate bowl, beat the cream cheese until smooth, then mix in the powdered sugar and vanilla extract until creamy.
  7. Scoop a tablespoon of cookie dough onto your prepared baking sheet. Press a small dollop of the cheesecake filling in the center, followed by an additional spoonful of cookie dough on top. Gently seal the edges.
  8. Bake in the preheated oven for about 10-12 minutes or until the edges are set but the centers still look soft.
  9. Allow the cookies to cool for a few minutes on the baking sheet before transferring to a wire rack.
