- 2 ½ cups all-purpose flour
- 2 tbsp cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 1 cup buttermilk
- 2 tbsp red food coloring
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Line baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate bowl, beat together butter, granulated sugar, and brown sugar until creamy. Add in the egg, buttermilk, and red food coloring, blending until smooth.
- Gradually fold the dry mixture into the wet until well incorporated.
- Using a cookie scoop, drop dollops of dough onto the prepared baking sheets, leaving space in between.
- Bake for 12-15 minutes or until just set. Cool completely.
- For frosting, beat cream cheese, butter, powdered sugar, and vanilla until creamy. Frost cooled cookies generously.

Notes
For a vegan version, substitute the egg with flaxseed meal mixed with water and use plant-based butter and cream cheese.
