Ingredients

  • ½ cup brown sugar, packed

  • 1 cup buttermilk
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. In a separate bowl, beat together butter, granulated sugar, and brown sugar until creamy. Add in the egg, buttermilk, and red food coloring, blending until smooth.
  5. Gradually fold the dry mixture into the wet until well incorporated.
  6. Using a cookie scoop, drop dollops of dough onto the prepared baking sheets, leaving space in between.
  7. Bake for 12-15 minutes or until just set. Cool completely.
  8. For frosting, beat cream cheese, butter, powdered sugar, and vanilla until creamy. Frost cooled cookies generously.

Notes

For a vegan version, substitute the egg with flaxseed meal mixed with water and use plant-based butter and cream cheese.
