Instructions

- In another bowl, mix granulated sugar, oil, and eggs until combined. Stir in buttermilk and vanilla extract.

- Cover the bowl with plastic wrap and refrigerate dough for at least 30 minutes.
- Roll tablespoon-sized balls of dough in powdered sugar until fully coated.
- Place on a lined baking sheet and bake for 10-12 minutes until edges are crinkled.
