Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a cupcake tray with colorful liners.
  3. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla extract. Add red food coloring and stir.
  5. Gradually add dry ingredients to wet mixture, mixing until just combined.
  6. Fill cupcake liners two-thirds full with batter and bake for 20-22 minutes, until a toothpick comes out clean.
  7. Let cupcakes cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
  8. For the frosting, beat together cream cheese and butter until fluffy. Gradually add powdered sugar and vanilla extract, mixing until smooth.
