Instructions
- Preheat your oven to 350°F (175°C).
- Line a cupcake tray with colorful liners.
- In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla extract. Add red food coloring and stir.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Fill cupcake liners two-thirds full with batter and bake for 20-22 minutes, until a toothpick comes out clean.
- Let cupcakes cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
- For the frosting, beat together cream cheese and butter until fluffy. Gradually add powdered sugar and vanilla extract, mixing until smooth.
- Frost cooled cupcakes generously with cream cheese frosting and add sprinkles if desired.
