Ingredients

- 1 medium green cabbage (or red cabbage)
- 1 cup Greek yogurt (or plain yogurt)
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (parsley, dill, or chives) for garnish
Instructions
- Thoroughly rinse the cabbage under cold water. Cut in half, remove the core, and slice finely.
- In a mixing bowl, combine yogurt, olive oil, lemon juice, minced garlic, salt, and pepper. Whisk until smooth.
- In a large bowl, add the shredded cabbage and pour the dressing over it. Toss until well coated.
- Let the salad rest for at least 10 minutes at room temperature before serving.
- Sprint the salad with additional fresh herbs before serving, if desired.
Notes
Use the best quality yogurt and olive oil to enhance flavor. Adjust seasoning to taste.
