A creamy and refreshing cabbage salad with yogurt, enriched with fresh herbs and lemon, perfect for summer gatherings.
Ingredients

- 1 head green or purple cabbage
- 1 cup full-fat Greek yogurt
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves fresh garlic, minced
- 1/4 cup fresh dill or parsley, chopped
- Salt and pepper to taste
Instructions
- Prep the cabbage by removing the outer leaves and slicing it finely.
- In a mixing bowl, combine the yogurt, minced garlic, lemon juice, salt, and pepper. Mix until smooth.
- Place the sliced cabbage in a large bowl and pour the dressing over it. Toss well.
- Chop the fresh herbs and fold them into the salad.
- Chill the salad in the fridge for at least 30 minutes before serving.
- Serve as a side dish or light lunch.
Notes
For a vegan option, replace yogurt with cashew cream and cabbage with kale or mixed greens.
