Description

  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup breadcrumbs (panko recommended)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon caraway seeds
  • 1 teaspoon black pepper
  • 1 cup mayonnaise
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce
  • Oil for frying

Instructions

  1. Prep the ingredients: Finely chop the corned beef and sauerkraut, then mix with cheese and seasonings in a large bowl.
  2. Combine: Add breadcrumbs to the mixture and combine using your hands until well mixed.
  3. Form the balls: Roll approximately 2 tablespoons of the mixture into golf ball-sized balls.
  4. Chill: Refrigerate the formed balls for about 30 minutes to help hold their shape.
  5. Fry: Heat oil in a skillet over medium heat and fry the balls for 3-5 minutes on each side until golden brown.
  6. Drain: Remove from oil and drain on paper towels.
  7. Prepare Spicy Thousand Island: Mix mayonnaise, ketchup, Worcestershire sauce, and hot sauce in a bowl.
  8. Serve: Plate the Reuben Balls with a side of spicy Thousand Island dressing for dipping.

Notes

For a healthier option, you can bake the balls instead of frying. Just spray with oil and bake at 400°F for 20-25 minutes, flipping halfway through.
