Description
Delicious crispy Reuben Balls filled with corned beef, sauerkraut, and Swiss cheese, served with a spicy Thousand Island dressing.

- 1 pound corned beef, finely chopped
- 1 cup sauerkraut, drained
- 1 cup Swiss cheese, shredded
- 1 cup breadcrumbs (panko recommended)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon caraway seeds
- 1 teaspoon black pepper
- 1 cup mayonnaise
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot sauce
- Oil for frying
Instructions
- Prep the ingredients: Finely chop the corned beef and sauerkraut, then mix with cheese and seasonings in a large bowl.
- Combine: Add breadcrumbs to the mixture and combine using your hands until well mixed.
- Form the balls: Roll approximately 2 tablespoons of the mixture into golf ball-sized balls.
- Chill: Refrigerate the formed balls for about 30 minutes to help hold their shape.
- Fry: Heat oil in a skillet over medium heat and fry the balls for 3-5 minutes on each side until golden brown.
- Drain: Remove from oil and drain on paper towels.
- Prepare Spicy Thousand Island: Mix mayonnaise, ketchup, Worcestershire sauce, and hot sauce in a bowl.
- Serve: Plate the Reuben Balls with a side of spicy Thousand Island dressing for dipping.
Notes
For a healthier option, you can bake the balls instead of frying. Just spray with oil and bake at 400°F for 20-25 minutes, flipping halfway through.
