Ingredients

  • 2 cups fresh mushrooms (cremini and shiitake)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh thyme
  • 1 large carrot, chopped
  • 2 stalks celery, chopped
  • 2 large potatoes, cubed
  • 6 cups vegetable broth
  • 2 tablespoons lemon juice
  • 1/2 cup white wine (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing until golden and fragrant (4-5 minutes).
  2. Add chopped carrots, celery, and potatoes. Sauté for another 5-7 minutes.
  3. Stir in the mushrooms and sauté for another 5 minutes.
  4. Pour in the broth and bring to a boil, then reduce to a simmer.
  5. Add fresh herbs and splash of white wine if using.
  6. Let the soup simmer for 25-30 minutes.
  7. Before serving, squeeze in fresh lemon juice and adjust seasoning.

Notes
