A comforting French Detox Soup made with fresh vegetables and herbs that revitalizes both body and spirit.
Ingredients

- 2 cups fresh mushrooms (cremini and shiitake)
- 1 large onion, diced
- 3 cloves garlic, minced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh thyme
- 1 large carrot, chopped
- 2 stalks celery, chopped
- 2 large potatoes, cubed
- 6 cups vegetable broth
- 2 tablespoons lemon juice
- 1/2 cup white wine (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing until golden and fragrant (4-5 minutes).
- Add chopped carrots, celery, and potatoes. Sauté for another 5-7 minutes.
- Stir in the mushrooms and sauté for another 5 minutes.
- Pour in the broth and bring to a boil, then reduce to a simmer.
- Add fresh herbs and splash of white wine if using.
- Let the soup simmer for 25-30 minutes.
- Before serving, squeeze in fresh lemon juice and adjust seasoning.
Notes
Use fresh, seasonal ingredients for the best flavor. This soup can be frozen for up to three months.
