Description

A nostalgic Southern dessert featuring creamy pudding, ripe bananas, and vanilla wafers that brings warmth and joy to any gathering.

Ingredients

Scale
  • 4 cups full-fat milk (or almond/oat milk)
  • 1 cup granulated sugar
  • 4 egg yolks
  • 1/3 cup cornstarch
  • 1/4 tsp salt
  • 4 tbsp unsalted butter
  • 1 tsp pure vanilla extract
  • 4 ripe bananas, sliced
  • 2 cups vanilla wafers

Instructions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually add the milk while whisking to prevent lumps. Cook over medium heat, stirring constantly until the mixture thickens and bubbles.
  2. In a separate bowl, beat the egg yolks. Once the milk mixture is thick, temper the yolks by adding a few spoonfuls of the hot mixture to them. Then, pour the yolk mixture back into the saucepan, stirring vigorously. Cook for an additional minute.
  3. Remove from heat and stir in the butter and vanilla extract until melted and fully incorporated.
  4. In a large serving dish or individual cups, alternate layers of vanilla wafers, banana slices, and creamy pudding. Continue layering until all ingredients are used, ending with pudding on top.
  5. Cover with plastic wrap, letting it touch the surface to prevent a skin from forming. Allow it to chill in the refrigerator for at least four hours or overnight for best results.
  6. Just before serving, garnish with whipped cream and extra banana slices.

Notes

Serve in individual cups for a special touch, and pair with freshly brewed coffee or tea.
