- 4 cups full-fat milk (or almond/oat milk)
- 1 cup granulated sugar
- 4 egg yolks
- 1/3 cup cornstarch
- 1/4 tsp salt
- 4 tbsp unsalted butter
- 1 tsp pure vanilla extract
- 4 ripe bananas, sliced
- 2 cups vanilla wafers
Instructions
- In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually add the milk while whisking to prevent lumps. Cook over medium heat, stirring constantly until the mixture thickens and bubbles.
- In a separate bowl, beat the egg yolks. Once the milk mixture is thick, temper the yolks by adding a few spoonfuls of the hot mixture to them. Then, pour the yolk mixture back into the saucepan, stirring vigorously. Cook for an additional minute.
- Remove from heat and stir in the butter and vanilla extract until melted and fully incorporated.
- In a large serving dish or individual cups, alternate layers of vanilla wafers, banana slices, and creamy pudding. Continue layering until all ingredients are used, ending with pudding on top.
- Cover with plastic wrap, letting it touch the surface to prevent a skin from forming. Allow it to chill in the refrigerator for at least four hours or overnight for best results.
- Just before serving, garnish with whipped cream and extra banana slices.
Notes
Serve in individual cups for a special touch, and pair with freshly brewed coffee or tea.
