A creamy and garlicky aioli that brings people together, reminiscent of family gatherings.
Ingredients

- 1 cup extra virgin olive oil
- 4–5 cloves of fresh garlic, minced
- 1 egg yolk
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- Peel the garlic cloves.
- In a bowl, whisk together the egg yolk and lemon juice until pale and creamy.
- Add the minced garlic to the egg mixture.
- Slowly drizzle in the olive oil while whisking continuously until emulsified.
- Season with salt and additional lemon juice to taste.
Notes
If the aioli breaks, start with another egg yolk and slowly whisk in the broken mixture until it emulsifies again.
