Description

A creamy and garlicky aioli that brings people together, reminiscent of family gatherings.


Ingredients

  • 1 cup extra virgin olive oil
  • 45 cloves of fresh garlic, minced
  • 1 egg yolk
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Peel the garlic cloves.
  2. In a bowl, whisk together the egg yolk and lemon juice until pale and creamy.
  3. Add the minced garlic to the egg mixture.
  4. Slowly drizzle in the olive oil while whisking continuously until emulsified.
  5. Season with salt and additional lemon juice to taste.

Notes

If the aioli breaks, start with another egg yolk and slowly whisk in the broken mixture until it emulsifies again.
