Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash into 1-inch cubes. Toss with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes or until golden brown and fork-tender.
  4. In a skillet over medium heat, add olive oil, followed by the diced onions and garlic. Sauté until translucent.
  5. Add ground turkey, cooking until browned and fully cooked. Season with salt, pepper, and herbs.
  6. Combine the roasted squash with the turkey in the skillet. Mix gently and adjust seasoning if necessary.
