- 1 lb Ground Turkey
- 1 medium Onion, diced

Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the butternut squash into 1-inch cubes. Toss with olive oil, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes or until golden brown and fork-tender.
- In a skillet over medium heat, add olive oil, followed by the diced onions and garlic. Sauté until translucent.
- Add ground turkey, cooking until browned and fully cooked. Season with salt, pepper, and herbs.
- Combine the roasted squash with the turkey in the skillet. Mix gently and adjust seasoning if necessary.
- Serve warm, optionally garnished with fresh herbs or Parmesan cheese.
