Ingredients

- 4 large carrots, chopped
- 1 medium onion, diced
- 2 cloves fresh garlic, minced
- 1 inch fresh ginger, grated
- 2 tablespoons olive oil
- 4 cups vegetable broth
- Salt, to taste
- Pepper, to taste
- 1/4 cup cream (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop your carrots into roughly uniform pieces.
- Spread the carrot and onion mixture on a baking sheet, drizzle with olive oil, season with salt and pepper, and toss to coat.
- Roast for about 25-30 minutes, or until fork-tender and caramelized.
- Transfer the roasted vegetables into a blender. Add the grated ginger and enough vegetable broth to cover the mixture. Blend until smooth and creamy.
- Pour the blended soup into a pot over medium heat. Stir in any additional broth for desired consistency and simmer for about 10 minutes.
- Adjust seasoning with salt and pepper, and stir in cream if desired.
- Ladle the warm soup into bowls and garnish with fresh herbs or a drizzle of olive oil, if desired.
Notes
Serve with crusty artisan bread or a sprinkle of feta cheese for a complete meal.
