- 1 cup ricotta cheese, whipped
- 1/4 cup hot honey
- 2 tablespoons olive oil

Instructions
- Preheat the oven to 425°F (220°C).
- Wash and prepare the carrots, cut into even pieces.
- Toss carrots in olive oil, salt, and herbs, then spread on a baking sheet.
- Roast for 20-25 minutes, stirring halfway for even cooking.
- While roasting, whip the ricotta until fluffy.
