A comforting and creamy side dish, this Roasted Garlic Mashed Butternut Squash combines the sweetness of butternut squash with the rich flavor of roasted garlic.
Ingredients

- 1 medium butternut squash, peeled and chopped into cubes
- 1 whole garlic bulb
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1/4 cup heavy cream (or plant-based alternative)
- Fresh herbs (rosemary or thyme), to taste
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (205°C).
- Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil and roast for 30-35 minutes.
- While the garlic roasts, prepare the butternut squash by peeling and chopping it into cubes, then toss with olive oil, salt, and pepper.
- Spread the squash onto a baking sheet and roast for 25-30 minutes, or until tender and golden.
- In a mixing bowl, combine the roasted squash and squeezed garlic cloves, adding butter and cream. Mash until smooth.
- Stir in fresh herbs and adjust seasoning as needed. Serve warm.
Notes
This dish can be made dairy-free by substituting butter with olive or coconut oil and using vegetable broth instead of cream.
