- 1/4 cup walnuts, toasted

Instructions
- Preheat your oven to 425°F (220°C).
- Peeled and dice sweet potatoes into uniform cubes (about 1-inch).
- In a large mixing bowl, combine sweet potatoes with olive oil, maple syrup, salt, and pepper. Toss until evenly coated.
- Spread sweet potatoes onto a parchment-lined baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway through for even browning.
- Toast walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently.
- Once sweet potatoes are done, toss them with the toasted walnuts before serving.
Notes
For extra flavor, sprinkle some cinnamon or nutmeg during the last five minutes of roasting.
