Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peeled and dice sweet potatoes into uniform cubes (about 1-inch).
  3. In a large mixing bowl, combine sweet potatoes with olive oil, maple syrup, salt, and pepper. Toss until evenly coated.
  4. Spread sweet potatoes onto a parchment-lined baking sheet in a single layer.
  5. Roast for 25-30 minutes, flipping halfway through for even browning.
  6. Toast walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently.
  7. Once sweet potatoes are done, toss them with the toasted walnuts before serving.
