Ingredients

  • 4 ripe pears (Bartlett or Bosc)
  • 200g creamy goat cheese
  • 100g walnuts (raw or toasted)
  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • Fresh herbs (thyme or rosemary) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the pears in half lengthwise and scoop out the seeds. Place cut-side-up in a greased baking dish.
  3. Crumble generous amounts of goat cheese over the pear halves.
  4. Roughly chop walnuts and sprinkle over the pears and cheese. Drizzle olive oil and then pour maple syrup over everything.
  5. Roast for about 25-30 minutes, until pears are tender and cheese is bubbly.
  6. Let cool for a few minutes, garnish with fresh herbs, and serve warm.

Notes

For a nut-free version, skip the walnuts or substitute with sunflower seeds. Ensure to use pure maple syrup for best flavor.
