- 4 ripe pears (Bartlett or Bosc)
- 200g creamy goat cheese
- 100g walnuts (raw or toasted)
- 1/4 cup pure maple syrup
- 2 tablespoons olive oil
- Fresh herbs (thyme or rosemary) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the pears in half lengthwise and scoop out the seeds. Place cut-side-up in a greased baking dish.
- Crumble generous amounts of goat cheese over the pear halves.
- Roughly chop walnuts and sprinkle over the pears and cheese. Drizzle olive oil and then pour maple syrup over everything.
- Roast for about 25-30 minutes, until pears are tender and cheese is bubbly.
- Let cool for a few minutes, garnish with fresh herbs, and serve warm.
Notes
For a nut-free version, skip the walnuts or substitute with sunflower seeds. Ensure to use pure maple syrup for best flavor.
