Ingredients
- Fresh tortellini (cheese or preferred filling)
- Roasted red peppers
- Freshly grated parmesan cheese
- Fresh herbs (basil or parsley)
- Olive oil
- Fresh minced garlic
- Fresh lemon juice
- Salt and pepper
Instructions
- Cook the tortellini in boiling salted water according to package directions. Drain and toss with olive oil.
- If using fresh peppers, roast them until charred, then steam, peel, and slice.
- In a large mixing bowl, combine cooled tortellini, roasted peppers, fresh herbs, garlic, olive oil, and lemon juice. Season with salt and pepper to taste.
- Add grated parmesan and gently toss to combine. Adjust seasoning as needed.
- Chill in the refrigerator for at least 30 minutes before serving.
