- 1 rotisserie chicken, shredded
- 2 cups broccoli florets
- 8 oz penne pasta
- 1 cup heavy cream or half-and-half
- 2 cloves garlic, minced
- 1 onion, diced
- 1 cup parmesan cheese, grated
- 2 tablespoons butter
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat, then add diced onion and minced garlic. Sauté until translucent.
- Stir in broccoli florets and cook until tender yet crisp.
- Add the pasta and enough broth to cover. Bring to a boil, then reduce to a simmer.
- While pasta cooks, shred the rotisserie chicken and season with salt and pepper.
- Once pasta is al dente, turn off heat and stir in cream and parmesan until creamy.
- Garnish with fresh herbs and serve warm.
Notes
