Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the parchment paper by cutting two sheets about 15 inches long and folding each one in half to create a crease.
  3. On one side of each parchment sheet, place a salmon fillet followed by an assortment of vegetables.
  4. Make the citrus butter by mixing softened butter with citrus zest and juice, salt, pepper, and chopped herbs. Spoon this mixture over the salmon and veggies.
  5. Fold the parchment over to enclose the salmon and crimp the edges to seal.
  6. Place the packets on a baking sheet and bake for 12-15 minutes, depending on the thickness of the salmon.
  7. Let the packets rest for a couple of minutes, then carefully open and serve.
