Ingredients
- Fresh salmon fillets
- Unsalted butter
- Citrus fruit (lemons, oranges, limes, or grapefruits)
- Fresh herbs (dill, parsley, or thyme)
- Sliced vegetables (zucchini, bell pepper, or asparagus)
- Salt
- Pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the parchment paper by cutting two sheets about 15 inches long and folding each one in half to create a crease.
- On one side of each parchment sheet, place a salmon fillet followed by an assortment of vegetables.
- Make the citrus butter by mixing softened butter with citrus zest and juice, salt, pepper, and chopped herbs. Spoon this mixture over the salmon and veggies.
- Fold the parchment over to enclose the salmon and crimp the edges to seal.
- Place the packets on a baking sheet and bake for 12-15 minutes, depending on the thickness of the salmon.
- Let the packets rest for a couple of minutes, then carefully open and serve.
Notes
To enhance flavor, consider adding a splash of white wine or a dollop of Dijon mustard to the butter mixture. Serve with a side of garden salad or fragrant rice.
