- 4 cups seafood or vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 celery stalks, diced
- 2 medium potatoes, diced
- 2 carrots, sliced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup heavy cream (optional)
- Juice of 1 lemon
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onions, minced garlic, and diced celery. Sauté until softened, about 5 minutes.
- Pour in the broth and bring to a simmer.
- Add diced potatoes and sliced carrots, cooking until the potatoes are tender, about 15-20 minutes.
- Chop the salmon into bite-sized pieces and gently fold into the broth, cooking until the fish flakes, about 5-7 minutes.
- Stir in chopped dill and parsley, seasoning with salt and pepper.
- If desired, stir in a splash of heavy cream for a creamy texture.
- Serve hot, garnished with a squeeze of fresh lemon juice.
Notes
For a lighter version, substitute zucchini for potatoes. Avoid overcooking the salmon for best texture.
