  • ¼ cup sugar
  • 1 pinch salt
  • 4 oz high-quality dark chocolate (70% cocoa), chopped
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup sugar (for caramel)
  • ½ cup butter (for caramel)
  • ½ cup cream (for caramel)
  • Flaky sea salt (to taste)
  • Coarse sea salt (for topping)
  • Fresh berries or whipped cream (optional)

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. Cut in chilled butter until it resembles coarse crumbs. Add cold water gradually until the dough holds together. Press into a tart pan, prick the bottom, and refrigerate for at least 30 minutes.
  2. Preheat your oven to 350°F (175°C). Line the crust with parchment paper, fill it with pie weights or dried beans, and bake for about 20 minutes. Remove the weights and parchment, and bake another 10–15 minutes until golden brown. Let it cool completely.
  3. In a saucepan, heat heavy cream until just simmering. Pour it over chopped chocolate in a bowl, letting it sit for a few minutes. Stir until smooth and incorporate the vanilla extract. Pour the ganache into the cooled tart crust, smoothing it gently. Refrigerate until set, about 2 hours.
  4. In a saucepan over medium heat, melt sugar until it turns deep amber. Remove from heat and stir in butter and cream carefully. Add a pinch of flaky sea salt, and let cool slightly.
  5. Once the ganache is set, pour the salted caramel over the top, allowing it to flow over the edges. Sprinkle with additional sea salt, if desired. Slice the tart and serve!
