- 1 lb boneless chicken (breast or thighs)
- 2 cups roasted green chiles (fresh or canned)
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1/2 cup cream or sour cream (optional)
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2–3 corn tortillas, cut into strips
Instructions
- Prepare your ingredients: Dice the onions and garlic, shred the chicken if cooked, and chop the green chiles.
- In a large pot, heat olive oil over medium heat. Add the diced onions and cook until soft and translucent, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
- If using raw chicken, add it to the pot to sear for a few minutes. If using pre-cooked chicken, skip this step.
- Pour in the chicken broth and bring the mixture to a gentle simmer.
- Add the roasted green chiles and let them infuse their flavor into the soup.
- Season to taste with ground cumin, salt, and freshly ground black pepper.
- Let the soup simmer for about 20-30 minutes, until the flavors meld together.
- Just before serving, stir in fresh lime juice, then ladle the soup into bowls. Top with tortilla strips, sour cream, and cilantro.
Notes
For a vegetarian version, replace chicken with tofu and use vegetable broth. Serve with warm cornbread or tortilla chips.
