Ingredients

  • 1 lb Italian sausage (ground or casing)
  • 3 cloves garlic (minced)
  • 1 onion (diced)
  • 28 oz canned crushed tomatoes
  • 4 cups beef or chicken broth
  • 8 oz lasagna noodles (broken into pieces)
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese (shredded)
  • 1/4 cup fresh basil (chopped)
  • 1 tsp dried oregano
  • 2 tbsp olive oil

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add diced onions and cook until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant.
  2. Add the Italian sausage to the pot, breaking it up with a wooden spoon. Cook until browned and cooked through.
  3. Pour in the crushed tomatoes and broth, stirring well to combine.
  4. Bring the soup to a boil, then add the broken lasagna noodles. Reduce heat to a simmer and cover until the noodles are tender, about 10-12 minutes.
  5. Stir in dollops of ricotta and shredded mozzarella, allowing them to melt into the soup.
  6. Toss in fresh basil and oregano just before serving.
  7. Ladle the soup into bowls and top with more cheese and herbs as desired.
