- 1 lb Italian sausage (ground or casing)
- 3 cloves garlic (minced)
- 1 onion (diced)
- 28 oz canned crushed tomatoes
- 4 cups beef or chicken broth
- 8 oz lasagna noodles (broken into pieces)
- 1 cup ricotta cheese
- 1 cup mozzarella cheese (shredded)
- 1/4 cup fresh basil (chopped)
- 1 tsp dried oregano
- 2 tbsp olive oil
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat. Add diced onions and cook until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant.
- Add the Italian sausage to the pot, breaking it up with a wooden spoon. Cook until browned and cooked through.
- Pour in the crushed tomatoes and broth, stirring well to combine.
- Bring the soup to a boil, then add the broken lasagna noodles. Reduce heat to a simmer and cover until the noodles are tender, about 10-12 minutes.
- Stir in dollops of ricotta and shredded mozzarella, allowing them to melt into the soup.
- Toss in fresh basil and oregano just before serving.
- Ladle the soup into bowls and top with more cheese and herbs as desired.
Notes
For lighter options, substitute ground turkey or chicken for sausage and use vegetable broth for a vegetarian version. Adjust noodle types as needed for dietary preferences.
