Ingredients

  • 2 lbs Beef Chuck Roast (cut into 12 inch pieces)
  • 2 cups Apple Cider
  • 1 large Onion (chopped)
  • 4 cloves Garlic (minced)
  • 3 medium Carrots (sliced)
  • 2 medium Potatoes (cubed)
  • 4 cups low-sodium Beef Broth
  • 2 sprigs Fresh Thyme
  • 2 sprigs Fresh Rosemary
  • Salt and Pepper to taste
  • Optional: 1 cup Mushrooms (sautéed)

Instructions

  1. Prep the Ingredients: Dice your beef chuck roast, chop onions, mince garlic, and slice root vegetables.
  2. Sear the Beef: Heat oil in a large pot, add beef in batches, and sear until browned.
  3. Add Aromatics: Remove beef, add onions and garlic to the pot, and sauté until translucent.
  4. Incorporate Liquid: Return beef to the pot, sprinkle with salt and pepper, then add apple cider and beef broth.
  5. Add Vegetables and Herbs: Toss in root vegetables and sprinkle with herbs. Bring to a gentle boil.
  6. Slow Cook: Reduce heat to low, cover, and simmer for at least two hours.
  7. Taste and Adjust: Taste and add more seasoning or vinegar/sugar if desired.
  8. Finalize: Remove herbs and serve hot, garnished with fresh parsley.

Notes

This stew can be made ahead of time as the flavors develop overnight. Freezes well for up to three months.
