- 2 lbs Beef Chuck Roast (cut into 1–2 inch pieces)
- 2 cups Apple Cider
- 1 large Onion (chopped)
- 4 cloves Garlic (minced)
- 3 medium Carrots (sliced)
- 2 medium Potatoes (cubed)
- 4 cups low-sodium Beef Broth
- 2 sprigs Fresh Thyme
- 2 sprigs Fresh Rosemary
- Salt and Pepper to taste
- Optional: 1 cup Mushrooms (sautéed)
Instructions
- Prep the Ingredients: Dice your beef chuck roast, chop onions, mince garlic, and slice root vegetables.
- Sear the Beef: Heat oil in a large pot, add beef in batches, and sear until browned.
- Add Aromatics: Remove beef, add onions and garlic to the pot, and sauté until translucent.
- Incorporate Liquid: Return beef to the pot, sprinkle with salt and pepper, then add apple cider and beef broth.
- Add Vegetables and Herbs: Toss in root vegetables and sprinkle with herbs. Bring to a gentle boil.
- Slow Cook: Reduce heat to low, cover, and simmer for at least two hours.
- Taste and Adjust: Taste and add more seasoning or vinegar/sugar if desired.
- Finalize: Remove herbs and serve hot, garnished with fresh parsley.
Notes
This stew can be made ahead of time as the flavors develop overnight. Freezes well for up to three months.
