- Potstickers (store-bought or homemade)
- 6 cups chicken or vegetable broth
- 3–4 tablespoons soy sauce
- Carrots, chopped
- Bell peppers, chopped
- Broccoli, chopped
- Snap peas
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- Green onions, chopped
- 1 tablespoon sesame oil
- Fresh cilantro or Thai basil, for garnish
- Optional toppings: chopped peanuts, lime wedges, chili flakes
Instructions
- Heat a large pot over medium heat and add a tablespoon of oil. Sauté minced garlic and ginger until fragrant.
- Pour in broth and soy sauce. Bring to a gentle boil.
- Add potstickers to the boiling broth. Cook for 3-5 minutes, stirring occasionally.
- Add chopped vegetables to the pot, cooking until softened. Spinach and delicate vegetables should be added near the end.
- After simmering for about 10-15 minutes, remove from heat and stir in sesame oil and fresh herbs.
- Serve warm in bowls, garnishing with extra herbs and optional toppings.
Notes
Feel free to swap potstickers for dumplings or noodles. This soup is perfect for customization with any fresh veggies you have.
