- 4 cups fresh corn (or 2 cans of corn, drained)
- 1 cup cheddar cheese, shredded
- 3 eggs
- 1 cup milk
- 3 tablespoons butter
- 1/4 cup fresh thyme and chives, chopped
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease your baking dish with butter.
- In a skillet, melt a tablespoon of butter over medium heat and sauté any additional vegetables until soft.
- In a large bowl, whisk together the eggs and milk until well combined. Stir in the corn, sautéed vegetables, cheese, and herbs. Season with salt and pepper.
- Pour the mixture into the greased baking dish and bake for 35-40 minutes, or until the top is golden brown and a toothpick comes out clean.
- Allow to cool for a few minutes before slicing and serving.
Notes
For a different flavor, try using Gruyère cheese or adding mushrooms. Ensure that you don’t overbake the pudding to keep the texture creamy.
