Ingredients

  • 4 cups fresh corn (or 2 cans of corn, drained)
  • 1 cup cheddar cheese, shredded
  • 3 eggs
  • 1 cup milk
  • 3 tablespoons butter
  • 1/4 cup fresh thyme and chives, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking dish with butter.
  2. In a skillet, melt a tablespoon of butter over medium heat and sauté any additional vegetables until soft.
  3. In a large bowl, whisk together the eggs and milk until well combined. Stir in the corn, sautéed vegetables, cheese, and herbs. Season with salt and pepper.
  4. Pour the mixture into the greased baking dish and bake for 35-40 minutes, or until the top is golden brown and a toothpick comes out clean.
  5. Allow to cool for a few minutes before slicing and serving.

Notes
