Ingredients
- Fresh Corn (or Frozen)
- Cheddar Cheese
- Eggs
- Milk or Cream
- Cornmeal
- Fresh Herbs (Chives, Thyme, etc.)

Instructions
- Preheat your oven to 350°F (175°C).
- Prep your corn by cutting kernels from the cob or thawing frozen corn.
- Sauté the herbs in a skillet with a touch of olive oil until fragrant.
- In a bowl, combine corn, sautéed herbs, milk, eggs, salt, and pepper. Stir in cornmeal and half of the cheese.
- Transfer the mixture to a greased baking dish and sprinkle remaining cheese on top.
- Bake for 45-55 minutes until golden and set.
- Let the dish rest for 10 minutes before serving.
- Serve warm or at room temperature.
