- 4 boneless chicken thighs
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp vegetable oil
- 2 cups fresh pineapple chunks
- Sliced green onions or toasted sesame seeds for garnish
Instructions
- In a bowl, combine brown sugar, soy sauce, minced garlic, and ginger. Add chicken pieces and marinate for at least 30 minutes, preferably overnight.
- In a large skillet over medium-high heat, add vegetable oil. When shimmering, add the marinated chicken and sear until golden brown, about 5–7 minutes on each side.
- Add fresh pineapple chunks to the skillet and cook until caramelized and tender, about 3–4 minutes.
- Pour in the remaining marinade and simmer for a few additional minutes to thicken the sauce.
- Garnish with green onions or sesame seeds and serve immediately over rice or a side salad.
Notes
Allowing the chicken to marinate longer enhances the flavor significantly. Use fresh ingredients for the best taste.
