  • 1/4 cup soy sauce
  • 3 cloves garlic, minced

  • 2 cups fresh pineapple chunks

Instructions

  1. In a bowl, combine brown sugar, soy sauce, minced garlic, and ginger. Add chicken pieces and marinate for at least 30 minutes, preferably overnight.
  2. In a large skillet over medium-high heat, add vegetable oil. When shimmering, add the marinated chicken and sear until golden brown, about 5–7 minutes on each side.
  3. Add fresh pineapple chunks to the skillet and cook until caramelized and tender, about 3–4 minutes.
  4. Pour in the remaining marinade and simmer for a few additional minutes to thicken the sauce.
