- 2 cloves garlic (fresh or dried)
- 2 tbsp fresh herbs (parsley, thyme, or tarragon)
- 1 cup all-purpose flour
- 1 large egg (or flax egg for vegan option)
- Oil for frying
- Salt and pepper to taste
Instructions
- Clean the mushrooms gently with a damp cloth and slice each into thick pieces (about ½ inch).
- In a bowl, whisk together the egg with a splash of water.
- In another bowl, mix the flour, salt, pepper, and finely chopped herbs.
- Dip each mushroom slice into the egg mixture and then coat with the flour mixture.
- Heat oil in a skillet over medium-high heat.
- Fry the mushrooms in batches for about 2-3 minutes on each side until golden brown.
- Transfer to a paper towel-lined plate and sprinkle with salt.
- Toss the fried mushrooms with freshly chopped herbs and a squeeze of lemon before serving.
Notes
For a vegetarian twist, substitute mushrooms with eggplant or zucchini. Leftovers can be reheated in an oven or air fryer for best crispiness.
