  • 1 zucchini, chopped
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Squeeze of lemon juice (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onions and minced garlic until translucent.
  2. Add chopped vegetables and stir for 5 to 7 minutes, allowing them to soften slightly.
  3. Pour in vegetable broth and bring the mixture to a boil.
  4. Reduce heat to low and allow to simmer for 25 to 30 minutes.
  5. Add oregano, basil, thyme, salt, and pepper; adjust seasonings to taste.
  6. Finish with fresh parsley and a squeeze of lemon juice before serving.
  7. Serve warm, optionally with crusty bread or grated Parmesan cheese on top.
