Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 1 zucchini, chopped
- 2 carrots, sliced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Squeeze of lemon juice (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Sauté diced onions and minced garlic until translucent.
- Add chopped vegetables and stir for 5 to 7 minutes, allowing them to soften slightly.
- Pour in vegetable broth and bring the mixture to a boil.
- Reduce heat to low and allow to simmer for 25 to 30 minutes.
- Add oregano, basil, thyme, salt, and pepper; adjust seasonings to taste.
- Finish with fresh parsley and a squeeze of lemon juice before serving.
- Serve warm, optionally with crusty bread or grated Parmesan cheese on top.
