- 1 yellow bell pepper, chopped

- 1 cup mushrooms, sliced
- 1 can (15 oz) crushed tomatoes
- 4 cups vegetable broth
- 1 tablespoon fresh basil, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- Salt and pepper, to taste
- 2 cups fresh spinach or kale
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and garlic; sauté until translucent, about 5 minutes.
- Stir in chopped carrots, celery, bell peppers, and zucchini; sauté for an additional 5-7 minutes until vegetables begin to soften.
- Add sliced mushrooms and sauté until tender, about 3-4 minutes.
- Pour in crushed tomatoes and vegetable broth; bring to a gentle simmer.
- Season with fresh or dried herbs, salt, and pepper; simmer on low heat for 20-30 minutes.
- Before serving, stir in fresh spinach or kale until wilted.
- Ladle into bowls and serve hot, optionally drizzling with olive oil or adding Parmesan cheese.
