- 8 cups cubed sourdough or whole-grain bread (gluten-free optional)
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh sage, chopped
- 1 cup onion, diced
- 1 cup celery, diced
- 2 cloves garlic, minced
- 1 cup pecans or walnuts, toasted
- 2 cups vegetable or low-sodium chicken broth
- 2 large eggs
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C). Toss bread cubes with olive oil and spread on a baking sheet. Toast for 10-15 minutes, until golden brown and fragrant.
- In a large skillet, melt butter over medium heat. Sauté onions and celery for 5 minutes until tender. Add garlic and sauté for another minute.
- Stir in fresh herbs, season with salt and pepper, and cook for 2-3 minutes to release flavors.
- In a large bowl, combine toast, sautéed veggies, and nuts. Pour broth over the mixture and toss gently.
- Whisk eggs in a separate bowl and fold into stuffing mix.
- Transfer to a greased casserole dish. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown and crispy.
- Garnish with fresh herbs before serving.
