- 4 medium sweet potatoes
- 1 lb ground turkey
- 2 cloves garlic, minced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cups spinach or kale, chopped
- 1/2 cup cheese (cheddar or feta, optional)
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 1 tsp Italian herbs
- Olive oil for sautéing
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and poke holes in the sweet potatoes and bake directly on the oven rack or a baking sheet for 45-60 minutes until tender.
- While the sweet potatoes bake, heat olive oil in a skillet over medium heat and sauté diced onions until translucent.
- Add minced garlic and diced bell peppers, cooking until soft.
- Incorporate ground turkey, breaking it apart and cooking until browned. Season with salt, pepper, paprika, and Italian herbs.
- Stir in chopped spinach or kale until wilted.
- If desired, mix in cheese and adjust seasoning.
- When sweet potatoes are done, slice open and fluff the insides with a fork. Stuff each potato with the turkey mixture.
- Return the stuffed potatoes to the oven for an additional 10 minutes.
- Serve warm with your favorite toppings.
