A hearty and nourishing dish that combines savory ground turkey with the natural sweetness of sweet potatoes, topped with fresh vegetables and optional cheese.


Ingredients

  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cups spinach or kale, chopped
  • 1/2 cup cheese (cheddar or feta, optional)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and poke holes in the sweet potatoes and bake directly on the oven rack or a baking sheet for 45-60 minutes until tender.
  3. While the sweet potatoes bake, heat olive oil in a skillet over medium heat and sauté diced onions until translucent.
  4. Add minced garlic and diced bell peppers, cooking until soft.
  5. Incorporate ground turkey, breaking it apart and cooking until browned. Season with salt, pepper, paprika, and Italian herbs.
  6. Stir in chopped spinach or kale until wilted.
  7. If desired, mix in cheese and adjust seasoning.
  8. When sweet potatoes are done, slice open and fluff the insides with a fork. Stuff each potato with the turkey mixture.
  9. Return the stuffed potatoes to the oven for an additional 10 minutes.
  10. Serve warm with your favorite toppings.
