Description

A comforting dish featuring sweet potatoes stuffed with savory ground turkey and spices, perfect for family dinners.


Ingredients

  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili flakes
  • Fresh parsley or cilantro, chopped
  • Greek yogurt, for topping
  • Feta cheese, for topping
  • Olive oil, for cooking

Instructions

  1. Preheat your oven to 400°F. Rinse the sweet potatoes and poke holes in them with a fork. Place on a baking sheet and roast until tender, about 45-60 minutes.
  2. In a skillet over medium heat, add olive oil and sauté garlic until fragrant. Add ground turkey and spices, cooking until browned.
  3. If using additional vegetables, add them to the turkey mixture as it cooks. Stir in chopped herbs before removing from heat.
  4. Cool sweet potatoes, slice down the middle, and open them up gently. Spoon the turkey filling into each potato.
  5. Top with Greek yogurt or feta cheese. Optionally, return to the oven for 5-10 minutes to melt the cheese. Serve warm.

Notes

You can substitute ground turkey with ground chicken or a plant-based option. Feel free to add leftover veggies for more nutrition.
