- 4 medium sweet potatoes
- 1 lb ground turkey
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp chili flakes
- Fresh parsley or cilantro, chopped
- Greek yogurt, for topping
- Feta cheese, for topping
- Olive oil, for cooking
Instructions
- Preheat your oven to 400°F. Rinse the sweet potatoes and poke holes in them with a fork. Place on a baking sheet and roast until tender, about 45-60 minutes.
- In a skillet over medium heat, add olive oil and sauté garlic until fragrant. Add ground turkey and spices, cooking until browned.
- If using additional vegetables, add them to the turkey mixture as it cooks. Stir in chopped herbs before removing from heat.
- Cool sweet potatoes, slice down the middle, and open them up gently. Spoon the turkey filling into each potato.
- Top with Greek yogurt or feta cheese. Optionally, return to the oven for 5-10 minutes to melt the cheese. Serve warm.
Notes
You can substitute ground turkey with ground chicken or a plant-based option. Feel free to add leftover veggies for more nutrition.
