Description

A comforting and flavorful Mongolian beef dish, cooked to perfection in a slow cooker, making weeknight dinners effortless and delicious.

Ingredients

Scale
  • 1.5 lb flank steak or sirloin, sliced into thin strips
  • 1/2 cup light soy sauce
  • 1/4 cup dark soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 green onions, sliced (for garnish)
  • 2 tablespoons cornstarch
  • 1/4 cup water (for thickening)

Instructions

  1. Slice the flank steak against the grain into thin strips.
  2. Whisk together light soy sauce, dark soy sauce, brown sugar, minced garlic, and ginger in a bowl. Add the beef, mixing well to coat, and let it marinate for at least 30 minutes.
  3. Transfer the marinated beef to the slow cooker and pour any leftover marinade over the top.
  4. Set your slow cooker to low for 6-7 hours or high for 3-4 hours, until the beef is tender.
  5. In the last 30 minutes, mix cornstarch with water and add it to the slow cooker. Stir to thicken the sauce.
  6. Once done, sprinkle with sliced green onions before serving.
  7. Serve with steamed rice or noodles.

Notes

For a gluten-free version, use tamari instead of soy sauce. Feel free to add vegetables like bok choy or broccoli for added nutrition.
