Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 cups fresh green beans, trimmed
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel sweet potatoes, then cut them into even cubes.
  3. Trim the edges off the green beans and cut them in half if necessary.
  4. In a large bowl, toss sweet potatoes and green beans with minced garlic, olive oil, salt, pepper, and herbs.
  5. Spread the mixture on a parchment-lined baking sheet in a single layer.
  6. Roast in the preheated oven for about 25-30 minutes, tossing halfway through.
  7. Check for golden-brown color and fork-tender sweet potatoes before serving.
  8. Allow to cool for a minute, then transfer to a serving dish and enjoy.

Notes
