- 2 large sweet potatoes, peeled and cubed
- 2 cups fresh green beans, trimmed
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)
- 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel sweet potatoes, then cut them into even cubes.
- Trim the edges off the green beans and cut them in half if necessary.
- In a large bowl, toss sweet potatoes and green beans with minced garlic, olive oil, salt, pepper, and herbs.
- Spread the mixture on a parchment-lined baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes, tossing halfway through.
- Check for golden-brown color and fork-tender sweet potatoes before serving.
- Allow to cool for a minute, then transfer to a serving dish and enjoy.
Notes
For added flavor, consider topping with grated Parmesan or feta cheese before serving. Be careful not to overcrowd the baking sheet.
