Seared Scallops with Spicy Cajun Cream

Description

A delightful dish combining the buttery sweetness of seared scallops with a rich and spicy Cajun cream sauce.


Ingredients

  • Fresh dry scallops
  • 2 tablespoons olive oil
  • 1 pat of butter
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 2 tablespoons Cajun seasoning
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the scallops dry with paper towels and season both sides with salt and Cajun seasoning.
  2. Heat 2 tablespoons of olive oil and 1 pat of butter in a heavy skillet over medium-high heat until shimmering.
  3. Carefully place the scallops in the skillet and cook without moving for 2-3 minutes until they are golden brown. Flip and sear the other side for another 2-3 minutes.
  4. Remove the scallops from the skillet and set aside. Add minced garlic to the skillet and cook for about a minute until fragrant.
  5. Pour in the heavy cream, scraping any scallop fond for extra flavor. Stir in additional Cajun seasoning as desired.
  6. Once the cream is bubbling and slightly thickened, return the scallops to the skillet, allowing them to soak in the sauce for a minute. Garnish with freshly chopped parsley before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut cream. Avoid overcrowding the skillet for a perfect sear.
