A delightful dish combining the buttery sweetness of seared scallops with a rich and spicy Cajun cream sauce.
Ingredients

- Fresh dry scallops
- 2 tablespoons olive oil
- 1 pat of butter
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 2 tablespoons Cajun seasoning
- Salt to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the scallops dry with paper towels and season both sides with salt and Cajun seasoning.
- Heat 2 tablespoons of olive oil and 1 pat of butter in a heavy skillet over medium-high heat until shimmering.
- Carefully place the scallops in the skillet and cook without moving for 2-3 minutes until they are golden brown. Flip and sear the other side for another 2-3 minutes.
- Remove the scallops from the skillet and set aside. Add minced garlic to the skillet and cook for about a minute until fragrant.
- Pour in the heavy cream, scraping any scallop fond for extra flavor. Stir in additional Cajun seasoning as desired.
- Once the cream is bubbling and slightly thickened, return the scallops to the skillet, allowing them to soak in the sauce for a minute. Garnish with freshly chopped parsley before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut cream. Avoid overcrowding the skillet for a perfect sear.
