- 1 lb ground chicken (can substitute with ground turkey)
- 2 tbsp sesame oil
- 1/4 cup toasted sesame seeds
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 scallions, finely chopped
- 1/4 cup soy sauce
- 2 tbsp honey or maple syrup
- 2 cups rice (white, brown, or cauliflower rice)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground chicken, minced garlic, ginger, scallions, sesame oil, soy sauce, and honey. Mix until just combined.
- Using a cookie scoop, portion out the mixture and roll into golf ball-sized meatballs. Roll each meatball in sesame seeds before placing them on a lined baking sheet.
- Bake the meatballs for about 20-25 minutes, or until golden brown and cooked through.
- Cook the rice according to package instructions while meatballs are baking.
- In a small saucepan, mix soy sauce, honey, and sesame oil over low heat until warmed through.
- Assemble the bowls by placing rice in each serving bowl, adding meatballs on top, drizzling with sauce, and finishing with additional scallions and sesame seeds.
Notes
Avoid overmixing the meatball mixture to keep them tender. Rolling in sesame seeds is essential for flavor and crunch.
