- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 2 cups fresh kale, chopped
- 1 can (15 oz) cannellini beans, drained
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon red pepper flakes
- Parmesan cheese, for serving
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and sauté for about 5 minutes until translucent. Stir in minced garlic and red pepper flakes, cooking for another 30 seconds to a minute until fragrant.
- Add diced tomatoes and their juices, and let them simmer to enrich the flavors.
- Pour in the vegetable broth and bring the mixture to a gentle boil.
- Add chopped kale and drained cannellini beans. Cook all together for about 20 minutes, allowing flavors to meld.
- In the last few minutes of cooking, stir in chopped rosemary and thyme. Season with salt and pepper. Add freshly grated parmesan if desired.
- Ladle the soup into bowls, drizzle with olive oil, and top with additional parmesan if you like.
