Instructions
- In a mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Gradually add in the egg and vanilla extract, mixing until just combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Slowly incorporate the dry mixture into the wet ingredients until well blended into a soft dough.
- Divide the dough in half, roll each portion into a log shape about 1.5 inches in diameter. Wrap in plastic wrap and refrigerate for at least 120 minutes until firm.
- Preheat your oven to 350°F (175°C). Unwrap the logs and slice them into 1/4-inch thick pieces. Place them on a baking sheet lined with parchment paper. Sprinkle with sugar if desired.
- Bake the cookies for 10-12 minutes or until the edges are lightly golden. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
- These cookies can be stored in an airtight container for up to a week, or decorate them for special occasions.
Notes
Make sure to chill the dough sufficiently to maintain the cookie shape. You can freeze the dough logs for later use.
